Long Jing, otherwise known as Dragonwell, is a variety of pan roasted green tea produced from the area of Hangzhou in Zhejiang Province. It is possibly one of the most famous green teas to be produced in China and as such comes in varying levels of quality.

This is an excellent quality Pre-Qing Ming Long Jing, meaning that it has been picked before the Qing Ming festival at the start of April. Qing Ming festival is considered to be an official indicator of the start of Spring and teas picked before this date are considered a higher value and quality.

Long Jing is made from a variety of different tea plant cultivars all grown in the Hangzhou area. This particular tea is made from Long Jing #43, one of the most popular varietals. #43 is known for cresting a finished tea with both zesty and nutty flavours.

The tea has a sweet taste, with hints of almond nuttiness at the forefront, combined with zesty citrus notes. The tea has a dry finish on your palette. The aroma of the tea is more vegetal.

This Long Jing has small but long flat leaves, with a pale yellow-green colour. As with many Chinese green teas, it is the pan roasted. However what makes this tea so unique is that the tea is pan fried twice. The first pan frying (known as 青锅 Qing Guo) stops the leaf from over-oxidising. After the tea is allowed to rest, the second frying (辉锅 Hui Guo) is used to flatten the leaf against the side of the pan, giving it the unique shape and look of the finished tea.
