Silver Needle is a white tea made from only the top leaf shoots (or buds) of the tea plant. The leaf shoots are picked from the plant in late March (sometimes early April) before they have opened, giving the tea its unique appearance. While Silver can ben pick on multiple harvests throughout the year, we consider this to be the best.

The fresh plucked shoots are laid out in shallow bamboo baskets and left to wither under the sun for up to 3 days to remove moisture. The withered leaves are then piled to start an enzyme oxidation in the leaf. After this, they are taken for a low temperature baking process, which stops the oxidation and fully drys the leaves for storage.

This is known as the Fuding style of Silver Needle, where the tea has gone through a lighter and more gentle oxidation process.

Many people consider white tea to be lacking in flavour, but brewed properly, this tea produces pleasant melon and peony notes, with a smooth and silky mouthfeel.
