After the warm reception that last years tea received, The Alnwick Garden welcomed us back to pick the blossoms (something that is usually forbidden) for a second year in a row. Due to the popularity of this blend, we decided to produce a slightly larger batch of 15kg for 2021.
Tom and Shiori visited The Alnwick Garden in mid April while the blossom trees were in full bloom. It took us a day to hand pick over 8000 blossoms. The same as last year, we were blessed with a warm, sunny day, which made it perfect for picking the blossoms.
Once picked we had to quickly wash the blossoms to remove any impurities, before sorting through and removing any broken pieces of blossom. We then had to quickly dehydrate the blossoms to preserve them. When processing was completed, our 8000 blossoms had shrunk down to roughly 100g of dehydrated petals. The petals were then blended with the tea, sticky cherry and flavouring oils to create the final tea.
The result is a balanced blend of hand picked blossoms, sencha tea and sour cherry pieces. The resulting flavour is sweet, floral and with hints of vanilla. Light and refreshing in flavour. It is reminiscent of the flavours found in traditional preserved sweet Japanese sakura blossoms. The tea base is a blend of Japanese and China senchas.
